Zašto ne možete procijeniti porciju
Pogreška u procjeni veličine porcije dovoljno je velika da nadjača većinu onoga što ljudi pokušavaju promijeniti u svojoj prehrani. To je problem koji aplikacije za skeniranje hrane postoje riješiti.
Veličina problema
Sustavni pregled procjene veličine porcije [3] i pogrešaka prisjećanja [2] pronalazi pogreške koje redovito dosežu desetke postotaka. Ključno je da je pogreška pristrana, a ne nasumična: ljudi podcjenjuju unos, i to više kada je unos veći i kada je riječ o hrani zbog koje se osjećaju osuđivanima.
Validacija u odnosu na dvostruko obilježenu vodu — referentnu metodu, o kojoj pišemo na našoj stranici o metabolizmu — to izravno kvantificira. Zato dnevnik prehrane koji pokazuje 1600 kcal uz nepromijenjenu tjelesnu težinu obično predstavlja problem mjerenja, a ne metabolizma.
Pogreška procjene veličine porcije
Zašto je to teško
- Percepcija volumena nije linearna. Udvostručenje promjera zdjele više nego udvostručuje njezin sadržaj, a ljudi procjenjuju prema širini.
- Ulje za kuhanje je nevidljivo. Jedna žlica sadrži više od 100 kcal, a ne pojavljuje se u nikakvom sjećanju na obrok.
- Ambalaža definira porcije. "Porcija" je sve što je stajalo u spremniku.
- Referentni predmeti ne funkcioniraju. "Veličine dlana" ovisi o veličini dlana.
- Sjećanje rekonstruira. Ljudi se prisjećaju onoga što obično jedu, a ne onoga što su pojeli.
Trening pomaže, a sustavni pregled učinaka treninga [4] pokazuje da poboljšanje slabi bez ponovnog utvrđivanja — uobičajen nalaz za perceptivnu vještinu.
Može li tehnologija to riješiti?
Ovdje na scenu stupa procjena prehrane temeljena na slici: fotografirate obrok, a model identificira namirnice i procjenjuje volumen. Postoje studije validacije u odnosu na referentne metode, a proširena stvarnost pregledana je kao pomoć u procjeni [1].
Iskren sažetak: metode temeljene na slici su nesavršene, ali bolje od prisjećanja. Uklanjaju korak pamćenja, koji je najveći izvor pogreške, ali nasljeđuju nove pogreške vezane uz procjenu dubine i skrivene sastojke. U odnosu na dnevnik prehrane napisan iz sjećanja prije spavanja, to je jasno poboljšanje. U odnosu na kuhinjsku vagu, nije.
Što to znači za praćenje
Koristite praćene kalorije kao relativni signal, a ne apsolutni. Ako je vaš zabilježeni unos dosljedan iz tjedna u tjedan, a težina se ne mijenja, korisno je promijeniti nešto i pratiti trend — a ne vjerovati cijelom broju. Dosljednost metode puno je važnija od točnosti metode, jer se dosljedna pristranost poništava kada uspoređujete sebe sa sobom.
