Il Nutri-Score cambia davvero gli acquisti?

Cosa trovano le revisioni
Una revisione sistematica del 2025 sull'efficacia del Nutri-Score [1] e una revisione sull'impatto dell'etichettatura sul fronte della confezione [4] convergono: le etichette spostano gli acquisti nella direzione desiderata, e lo spostamento è piccolo. Il lavoro di validazione dei criteri [2] affronta una questione diversa e precedente — se l'algoritmo classifica gli alimenti come farebbe la scienza nutrizionale — e la risposta è ampiamente sì, con casi limite noti.
Gli indici dietetici alla base di questi sistemi sono stati anche scrutinati [3], il che è importante perché un algoritmo di profilazione codifica giudizi contestabili su quali nutrienti ponderare.

I casi limite noti
I critici fanno notare che l'olio d'oliva, le noci e il formaggio ottengono punteggi peggiori di quanto l'intuizione suggerisca, e che alcune bevande dietetiche ottengono punteggi buoni. Parte di questo è giusto e parte fraintende il design: il Nutri-Score confronta all'interno delle categorie su base per 100 g e non è un verdetto su se un alimento appartenga a una dieta sana.
Revisioni recenti dell'algoritmo hanno affrontato diversi di questi casi. Il punto più profondo rimane: una singola lettera non può codificare tutto su un alimento, e trattarla come se lo facesse è un uso improprio piuttosto che un difetto.
Cosa significa legalmente un'affermazione sulla salute
Nell'UE, le affermazioni nutrizionali e sulla salute sono regolate: solo le affermazioni autorizzate con una base di evidenza accettata possono apparire, e ciascuna è legata a specifiche condizioni d'uso. "Contribuisce alla normale funzione immunitaria" è una frase autorizzata con una base definita, non una prosa di marketing.
Ciò che non è regolato è tutto ciò che la circonda — immagini, linguaggio di provenienza e termini come "naturale" o "salutare". L'affermazione regolata è spesso la dichiarazione meno fuorviante sulla confezione.
